Herbal tea is taking fresh or dried bits of plants like leaves, flowers, fruits, barks, roots, rhizomes, or seeds and infusing or simmering them in water. The temperature, whether it’s hot or cold, and the time of soaking depends on which part of the plant you’re using and which phytochemical you are looking to extract. As this happens, the water breaks down the plant’s cell walls. That’s when it releases these powerful phytochemicals that are like the building blocks the plant needs to thrive. And guess what? These same building blocks are available to us for amazing health benefits.

Why is Water Used to Make Herbal Tea?

Water is a universal solvent that has polarity. Polarity is the result of the negative and positive charges of the oxygen and hydrogen atoms that make up a molecule of water. Polarity gives the water the ability to attract a multitude of phytochemicals (all the good stuff the plant makes for it to thrive and survive). The polarity allows water to break down the cell wall of plant matter, releasing phytochemicals. Now, we can benefit from all the plant has to offer.

Legend has it that the discovery of tea happened thousands of years ago in 2737 BCE, when the Chinese Emperor, Shen Nong, a Chinese scientist, and herbalist, was boiling a pot of water in his backyard. Leaves from a nearby Camellia sinensis shrub fell into a boiling pot of water. He had no idea what he was about to discover. TEA!

Not only did it smell and taste delicious, but it was also energizing. He liked it and began drinking it and noticed positive health benefits. He made drinking this tea a regular part of his lifestyle.

As an herbalist, Emperor Shen Nong began to experiment with infusing other plants in boiling water. As a result, many herbs and their health benefits were discovered. His discoveries were recorded and passed down as references to the supportive power of many plants. This story gives us a reference to the first notable mention of an herbal infusion, or herbal tea.

Herbal teas are called tisanes in many parts of the world. Tisanes are infusions made from any plant matter other than the leaves of the Camellia sinensis shrub. For simplification, I will refer to tisanes as herbal tea. However, keep in mind that they are caffeine-free.

Steeping Wellness: Infusions and Decoctions

Infusions are appropriate for extracting phytochemicals from delicate, aromatic parts of plants such as leaves or flowers. The steep time can be short or long depending on the purpose of the tea. Hot or cold water can be used depending on the wanted phytochemicals and the purpose of the tea.

Decoctions are necessary for breaking down the cell wall of tougher plant materials such as roots, bark, and dried fruit so phytochemicals can be extracted.

Plants have powerful phytochemicals that are responsible for helping them survive and thrive in their own environment. When we steep them in water to make an infusion, the water breaks down the cell wall of the plant to release the phytochemicals in a way that our body can use. The benefits that the plants get from the phytochemicals are passed down to us. How cool is that? Because of this, there are many health benefits to drinking herbal tea.

We can drink herbal tea to support and build our immune system, digestive system, circulatory system, respiratory and cardiovascular system as well as the reproductive system. Herbal teas can provide nourishment and support for our skin and connective tissue too! This is not the complete list, there is much more our herbal friends can do for us.
